Try this Time-Saver Homemade Tocino

A small eatery typically on the roadside, accessible to commuters, tapsihan offers affordable set meals of tapsilog and its variations. The aroma of the hot fried rice is enough to make hungry passersby line up for a quick satisfying meal. 

Tapsilog is a set meal made of trio 1) tapa beef strips– sweet soy garlicky, 2) sinangag (garlic fried rice), and 3) a sunny side up. Some add slices of fresh tomatoes or cucumbers or pickled papaya. Tapa could be changed into tocino, bacon, and fried fish, but the fried rice and egg or si-log (sinangag + itlog) remain constant. 

Tocino, chicken or fish, can be fried, glazed in a pan or grilled.

Homemade tocino used to take days to be cured, which is why store-bought frozen tocino packs became popular in households because they’re much easier to prepare. The drawback is that they usually contain artificial red color, and potassium nitrite or curing salt (a preservative that makes the tocino red and juicy).
