Afritadang Bangus

Instructions

  1. Season fish with salt for 5 minutes. Dredge in cornstarch and fry in hot oil over medium heat for 8 minutes or until golden brown on both sides. Remove from pan and drain excess oil in paper towel or mesh rack.
  2. In a separate pan, heat oil and fry carrots and potatoes for 8 minutes or until tender. Remove from pan and set aside. Saute garlic until golden brown, add the onion and tomato, and saute until softened.
  3. Add the dissolved Mama Sita’s Menudo/Afritada Mix. Bring to a boil. Add the fried fish, fried carrots, and fried potatoes. Simmer for 5 minutes.
  4. Add the bell pepper and green peas. Cook for another 2 minutes.
  5. Remove from heat. Transfer to a serving plate. Serve hot with rice.
