All-Natural Vinegars Attract Attention at the 2019 International Food Exhibition
No synthetic acetic acid, no cloudifiers: Mama Sita’s celebration of vinegar’s regional diversity draws crowds at this year’s IFEX
Filipino food gets the international limelight at the 13th International Food Exhibition. The three-day event, which ran from May 24-26 at the World Trade Center in Pasay City, featured the finest agricultural exports, hearty homegrown dishes, emerging trends, and culinary innovations from the Philippines and its neighboring Asian countries. Mama Sita’s, who has been bringing the taste of homegrown flavors all over the country and across the world for over 30 years, indulged guests and exhibitors with a Philippine flavor Journey featuring their all-natural vinegars and heirloom recipes.
Guests and visitors were given a taste of classic Filipino favorites such as barbecue, kaldereta, and sisig together with modern spins on well-known dishes featuring native ingredients like coconut sap, mango, calamansi, cacao, as well as grains like heirloom rice and adlai. This daringly sumptuous lineup included paella (made with Adlai grains), a lightly-dressed side salad (of jicama-papaya and cilantro), santol (cotton fruit) sherbet with Labuyo hot pepper sauce, Champorado (made with Heirloom rice from the Cordilleras), and watermelon gazpacho.
Keeping Teresita “Mama Sita” Reyes’ passion for creative local flavor discovery is the Cashew Vinegar. A finely fermented vinegar that respects timeless traditions and techniques without a single drop of glacial acetic acid or any other synthetic chemical.
Made from hand-picked cashew fruits that reap an abundance of sunshine, natural spring water, and fresh mountain breeze, each finely crushed produce is perfectly aged to an exquisite vinegar with a distinct aromatic scent. The resulting balance between sweet and tart flavors makes it the perfect dressing for salads and slaws, the excellent drizzle for sweet treats, and the ideal complement to meats and fish.
Upholding a legacy that spans five generations of fine Filipino cooking, Mama Sita’s has garnered global acclaim for the choice ingredients in its products and its time-honored family recipes.
