Ukoy Kalabasa (Vegetarian Fritters)

A vegetarian version of the Filipino appetizer made with squash.

Instructions

  1. Prepare the batter: In a mixing bowl combine all-purpose flour, cornstarch, Mama Sita’s Palabok Mix, and water. Stir in squash, onions, celery, and leeks. Mix until well blended.
  2. Form the fritters: In a saucer, form batter mixture into small 2” to 3” clumps. Deep-fry in pre-heated oil over medium-high heat until golden brown, about 5 minutes. Drain excess oil. Continue the process until you used up the batter mixture. Serve hot with garlic dipping sauce.
  3. Prepare the sauce: In a bowl, combine vinegar and salt.
