Instructions
- In a wok, heat oil and fry eggplant until tender. Set aside. Sauté garlic and onion until soft.
- Add ground meat and cook until golden.
- Add the Mama Sita’s Oyster Sauce, bell pepper, and water.
- Cook over high heat until sauce thickens.
- Add fried eggplant and stir-fry.
- Remove from heat and garnish with chopped spring onions.
