Instructions
- In a small pot, put liempo and add enough water to cover meat. Bring to a boil and simmer until tender. Remove from heat. (Set aside soup for another use.)
- Grill or sear the meat and cut it the same as the tofu. Set aside.
- In a skillet, heat the cooking oil over medium heat and stir-fry half of the onions until soft. Add 1 tbsp Mama Sita’s Sisig Sauce and water.
- Add the pork and tofu, mix well. Continue cooking and add the remaining 1 tbsp Mama Sita’s Sisig Mix well and taste. Adjust seasoning as needed.
- Increase the heat to high and add the remaining onions and green chili as needed.
- Serve immediately on a hot sizzling plate with calamansi.
