Sizzling Tokwa’t Baboy

  1. In a small pot, put liempo and add enough water to cover meat. Bring to a boil and simmer until tender. Remove from heat. (Set aside soup for another use.)
  2. Grill or sear the meat and cut it the same as the tofu. Set aside.
  3. In a skillet, heat the cooking oil over medium heat and stir-fry half of the onions until soft. Add 1 tbsp Mama Sita’s Sisig Sauce and water.
  4. Add the pork and tofu, mix well. Continue cooking and add the remaining 1 tbsp Mama Sita’s Sisig Mix well and taste. Adjust seasoning as needed.
  5. Increase the heat to high and add the remaining onions and green chili as needed.
  6. Serve immediately on a hot sizzling plate with calamansi.
