Roast Chicken with Caldereta Mix

A hearty dish of chicken seasoned with Mama Sita’s Caldereta Mix, roasted and enjoyed by all cultures.

Tip: The chicken is done when it has reached an internal temperature of 180ºF.

  1. Sprinkle Mama Sita’s Caldereta Mix on the chicken and rub it on the skin and inside the chicken. Cover and keep in the refrigerator overnight.
  2. USING AN OVEN: Preheat oven to 350ºF. Place the chicken and potatoes on a roasting pan fitted with a wire rack and bake for 1 hour and 45 minutes or until the chicken is done.
    USING A TURBO BROILER : Set the Turbo broiler to 250ºF. Place the chicken and potatoes on the cooking rack and cook for 1 hour, turning the chicken occasionally to prevent the skin from burning.
  3. Place chicken in a serving platter with the roasted potatoes topped with chopped parsley and blanched French beans.
