Roast Chicken Adobo

Chicken seasoned with Mama Sita's Adobo Mix, a hearty dish to be enjoyed for gatherings and special occasions.

  1. In a bowl, rub Mama Sita’s Adobo Mix on the whole chicken. Massage well into the skin and meat.
    Using a roasting fork or dinner fork, prick the meat inside the chicken cavity. Transfer to a plastic or
    freezer bag. Seal and marinate in the refrigerator overnight.
  2. Remove from plastic bag and place in a roasting tray with rack.
  3. USING AN OVEN: Preheat oven to 350ºF. Bake the chicken backside up for 30 minutes. Baste occasionally with oil. Turn over the chicken, breast side up. Continue baking for 1 hour and 12 minutes. Continue basting with oil until the internal temperature reaches 165ºF (74ºC).
    USING A TURBO BROILER : Place the chicken in a pan and cook in a turbo broiler set to 250ºF (120ºC). Bake the chicken backside up for 30 minutes and baste occasionally with oil. Turn the chicken over, breast side up. Continue baking for 1 hour and continue basting with oil until internal temperature reaches 165ºF (74ºC).
  4. Transfer onto a serving platter and serve with Arugula and Tomato Salad as a side
