- In a medium frying pan, heat 2 tbsp cooking oil. Pan fry onions and set aside.
- In the same pan, add 4 tbsp cooking oil. Pan fry eggplants.
- Drain excess oil, set aside. Pour in Mama Sita’s Toyo & Kalamansi and water.
- Add eggplants and bring to a boil. Simmer for another 2 minutes. Add the fried onion rings.
- Remove from heat and serve hot.
