Bistek na BangusFried Milkfish in Citrus-Soy Marinade

  1. Marinate bangus in Mama Sita’s Toyo & Kalamansi for 15 minutes.
  2. Place the flour on a plate. Remove the bangus pieces from the marinade and roll in flour. Save the marinade.
  3. Heat oil in a frying pan. Pan fry bangus pieces until golden, taking care not to overcrowd the pan.
  4. Pour in the remaining marinade and cook over medium heat until it starts to boil. Add the seared onions and water, as needed.
  5. Continue cooking for another 5-10 minutes or until the onions have soaked up on some of the sauce.
  6. Remove from heat. Garnish with sliced tomatoes and arugula.
